A couple of weeks ago at nursery Emily baked rock cakes, we used to bake them lots when I was little too and they are an old favourite! At the weekend Emily and my Mum also did some baking and made more rock cakes, so thought it was about time I added them on here. Click
Here is the recipe, I used a version from a book called ‘The Baker’s Daughter’ by Louise Johncox, its a lovely book filled with all sorts of traditional bakes that remind you of your childhood. I adapted the recipe and added glacier cherries instead of mixed peel as I love glacier cherries!
Rock Cakes
225g plain flour
A pinch of salt
1 tsp baking powder
1/2 tsp mixed spice
1/2 tsp grated nutmeg
100g butter
50g glacier cherries, chopped
50g currants
110g caster sugar
1 egg
1 tbsp milk
Preheat the oven to 180 C. Line a couple of baking trays.
Sift the flour, salt, baking power and spices into a bowl. Rub in the butter till the mixture resembles fine bread crumbs.
Stir in the sugar, currants and glacier cherries. Make a well in the centre, put the beaten egg and milk into the well and gradually stir in to incorporate the dry ingredients from around the edges until everything is mixed. Add a little more milk if the mixture is too dry.
Use 2 forks or a spoon to place dollops of the mixture on the baking tray.
Bake for 15-20 minutes until light golden.
These really are one of the easiest recipes to make and perfect for little helpers! And they delicious as an afternoon snack with a cup of tea.
