We haven’t managed as much Christmas baking this year, but I did make a few Christmas goodies this week for Emily’s nursery. I had a lot of homemade mincemeat to use and decided to make a mince pie alternative. Click  here to try this recipe.

This week Becky and I got to make the technical challenge together! I went down to Kent for the weekend for Emily’s second birthday so we decided to make the Rum Nicky for pudding on Saturday night. Mum also helped out by weighing out some of the ingredients and bringing a pie dish for us to use! Click here to keep reading.

Last week was pastry week on the bake off and I really don’t make much pastry as it’s very hard to make gluten free for Rich to eat so I just tend to avoid it. So I was looking forward to the challenge and eating 12 custard tarts all to myself! Click  here to see how I got on.

I’ve been making the same mince pies for years so decided to try something different this year. I had a look through my recipe books and found Nigella’s frangipane mince pies which sounded really good. I also made my own mincemeat too and used a different recipe which wasn’t as good as Delia’s so I’ll be going back to her recipe next year! Click  here to try these mince pies.

Last night, was my last opportunity to try the technical GBBO challenge before this week’s bake off. So, I decided to give it a go. I read through the recipe a few times before I started and it didn’t seem that difficult, just quite time consuming. However, they turned out to be trickier than I thought, even with the full instructions (which seemed half complete to me so I don’t know what the contestants got given)! Mince Pies

It’s about time we put some mince pies on the blog! If you only bake one thing this Christmas, have a go at these, they really are super, especially when they are warm straight out of the oven with a cup of tea. This recipe is from Josceline Dimbleby. This year I can’t make enough mince pies, I think I have already baked over 60, some are in the freezer ready for Christmas and the rest have been taking into the office as well as having a a few left over for an afternoon snack.
