For the last two weeks I’ve been lacking sleep. Partly because of the Olympics (why do most of the finals have to be in the middle of the night?!) and partly due to being at a hen do last weekend for one of my friends, Sian. These Olympic themed cupcakes were for Sian’s hen do. We had a mini Olympics during the day on Saturday so I decided that some themed cupcakes would help re-fuel the athletes!
The hen do was in Surrey so I took a couple of days off work and went to stay with Becky for a couple of nights beforehand. I therefore had to bake the cupcakes at her house, so I kept the decorations simple so we didn’t spend all the time in the kitchen (although I don’t think either of us would have complained if we had!). I used the wide end of a big piping nozzle to cut out circles of sugar paste in the five colours of the Olympic rings and then placed them all on a non-stick sheet. I then used the wide end of a smaller piping nozzle to cut a circle out of the centre of each one to leave rings. I left them to dry out so that they held their shape when I put them onto the cupcakes.

For the cakes themselves, I wanted to do a summery flavour so Becky suggested lemon and lavender – the recipe can be found here. I’ve never made them before and even though they were 2 days old when we ate them, they were still really good.
Once the Olympics are over, hopefully I’ll get some more sleep and then I can concentrate on making the decorations for Sian’s wedding cake in a couple of weeks…
