Emily was super excited about making rainbow bagels this week, she loves rainbows and her favourite breakfast is bagels! We eat and bake quite a lot of bagels in our house, so this challenge was perfect for us. Click here to see how we got on.

We planned our bagel making around Sunday lunch time, so they would be fresh out of the oven in time for lunch. Paul’s recipe can be found here. The recipe was straight forward and the girls enjoyed kneading the dough, Chloe kept trying to eat it again, can’t imagine it tasted too good! I managed to knead in the food colouring in while Emily and Chloe kneaded some of the other bits of dough, so luckily avoided getting their hands coloured too.

Once it had proved I rolled it out while the girls watched and then Emily did a little bit of helping to roll and twist them. They both stood and watched eagerly while I boiled them before they went in the oven.

The end result was super and we really enjoyed them with some cream cheese on for our lunch, delicious, warm and chewy, they definitely put a smile on our faces!

The best way to use up left over cake decorations is to do some more baking! I have a pot filled with left over flowers of various shapes, sizes and colours, so I picked out these ones to create some elegant biscuits! I usually use a biscuit recipe from the Biscuiteers Book of Iced Biscuits as they are always tasty and have the perfect texture. Click  here to try their vanilla biscuit recipe.

Over the last few months, lots of my friends have had babies. Having just had a baby myself 4 months ago, I know how crazy the first few days and weeks can be. I love making presents for people and a box of cupcakes seemed perfect for any new parents – especially useful to have something to offer any visitors or for those days when things are so chaotic that all you manage to eat is a cupcake for breakfast, lunch and dinner! I’m therefore slightly restricted with what I can blog about at the moment – I can only post things which I’ve taken photos of on my phone. I was planning on writing my next one on the red velvet wedding cake which I made several weeks ago for one of my best friends, Nic. 20140806-210130-75690138.jpg Things have been slightly crazy recently, hence the lack of blog posts. We’re in the process of moving to Newcastle! A couple of weeks ago I left the job I’ve had for the past 7 years. I used to bake fairly regularly for the office (most of the comments in my leaving card were cake related!) and on several occasions I made cakes for others when they left. However, I’d never worked out what I’d make for my own leaving cakes. It took me a while to work out what to make but eventually I settled on these!

It’s not that I haven’t baked anything, it’s more the fact that Tom came home – despite the fact he seems to be working constantly I suddenly have less free time! Anyway, I made this cake last weekend, with my sister. It was for our great Aunt’s 90th birthday – happy birthday Auntie Joan! We didn’t want to do just a plain sponge so the cake was lemon & poppy seed with a raspberry curd filling and a lemon buttercream – it was very light and delicious. Click here to keep reading.

Last night I had a break from all the Christmas baking I’ve been doing and made these: cupcakes for Karein’s last day in the office before she goes on maternity leave. Butterfly Cupcakes

So, what should I do for my first post?! I guess I should start with something simple! The cupcakes I probably make most often are plain vanilla or chocolate – usually because they always go down well and they’re quick and easy to make, giving me plenty of time to decorate them! My favourite recipes are from The Hummingbird Bakery Cake Days book – they’re simple to make, they always come out perfectly and I know they taste good! And the decoration I’ve made the most? Probably these chocolate flutterbies. Although I’ve only made them four times – I like trying new things!
