Toffee Bars

These are possibly my favourite bar cookies – they are so simple to make and they are really moreish! They are essentially a simplified version of millionaires shortbread/caramel slice: the caramel and shortbread is combined in one layer. If you like millionaires shortbread you’ll love these.

Last week, I played in a uni hockey tournament after work. The day before I asked people in the office what flavour cupcakes I should make to keep us going. James suggested “Lucozade” and Kiri suggested “half time orange” cupcakes. So I went with Orangeade – I bought a sample pack of Soda Stream syrups when I made some Cola cupcakes a while ago and I hadn’t used any of the other flavours yet so I decided to give the orange one a go. Toblerone Cupcakes

In the office, if you go on holiday you’re meant to bring back “goodies” from wherever you go. On Thursday I headed over to Germany to see Tom and then as a surprise took him to Prague for the weekend for his 30th birthday! I’ve been away for nearly a week and I left the country so in theory I should probably have brought something back. However, I didn’t. Instead, I made these Toblerone cupcakes with a giant Toblerone which technically I didn’t even buy – Tom bought me the weekend before when he came back home! Anybody who lives in the UK will know that this summer (if you can call it that), it rained pretty much constantly. Spring seemed to just turn into autumn, with only a couple of warm sunny days in between. The bad weather is what inspired these cupcakes, so I guess something good came out of the bad weather.
