I love the idea of popping some gingerbread men into some rocky road, such a fun idea! I made a big batch of gingerbread the other day, so have been using it to make various things including the gingerbread men for this rocky road, it’s so Christmassy and makes the house smell amazing when it’s baking. On Sunday we finally got around to having Chloe’s Baptism, 2.5 years later than planned due to covid etc. But it was worth the wait, we had a wonderful weekend with family and Godparents. It was Dad’s 70th Birthday in the middle of August and he treated us all to a wonderful week away. Em and I discussed various ideas for his Birthday cake design and finally settled on a lawn mowing themed cake as Dad absolutely loves his lawn and mowing beautiful stripes into it! I saw this recipe in the Waitrose magazine last Christmas but didn’t get round to making it. It’s a recipe from John Whaite (who won GBBO in 2012) and it’s a perfect Christmas flavour combination of gingerbread and mincemeat, yummy! Click here to see the recipe.
