This week has been super busy as it was Emily’s 4th Birthday on Sunday, so all my baking energy went into creating a crazy rainbow coloured unicorn cake for her! This was a bit of a last minute decision to make it for dinner on Monday night as Em was coming to stay for the night, so a great opportunity to make it together and then eat it for dinner. P4064141.JPGWe are away for Easter this year as it’s our Grandma’s 90th Birthday, so I thought I’d make an Easter cake a couple of weeks early for a weekend treat when we had friends staying. I loved the sound of this spiced marmalade bundt cake from the Waitrose newspaper a while ago, so thought I would give it a go. I had planned to make an Easter cake last year, but unfortunately ended up spending Easter in hospital with pneumonia, so this year I really wanted to make something special. Click here for the recipe and to see some more photos of this cake.

So this week while Emily was at nursery I made some time to try a few new Christmas recipes. This one looked nice and easy and perfect as a Christmas pressie for Emily’s hard working nursery staff along with a few other goodies. And of course a few slices for us too! Click here to have a look at this recipe.

I didn’t get round to uploading any photos of last years ginger bread house but anyone that’s been to our house in the last year will have seen it! It’s been on the sideboard as a permanent feature all year! There’s no chance we’ll eat it now, but it makes a great Christmas decoration and having had baby Chloe just three weeks ago there certainly won’t be time to make one this year! img_1295.jpgI was a  bit disappointed with last weeks challenge as it was another one that was hard to replicate at home without the special equipment. So I decided to make it anyway but made flat pancakes instead of the balls. The flavours sounded really good, so I was still keen to have a go. Click  here to see how I got on.
