
Having had a very busy first 2 weeks of the Easter holidays, the girls were very insistent that I made an Easter cake and despite having very limited time, I couldn’t say no! I wanted to make a simnel cake, but I was keen to try a new recipe. Click here to keep reading.

I saw the pic of this cake on Pinterest a while ago and thought it looked super fun! The original design can be found here. I don’t have a spherical baking tin, so I ended up using one of my metal mixing bowls and baking it in 2 batches. I then covered each half with marzipan and then joined them together with more marzipan to create a rough sphere. Next I iced the ball shaped cake with white sugar paste as a base so I could then put the sheep’s woolly swirls on top and any gaps would be white underneath.

I have tried quite a few simnel cake recipes over the years and at the moment I don’t have a favourite, so thought I would try another recipe out, I chose this pear and apricot simnel cake recipe from the Delicious website. The recipe can be found here. The addition of the dried apricots and dried pears were really good! I’d definitely recommend it. Happy Easter!
