easter bunny cakeAfter I made a dinosaur cake for David’s son’s birthday, he asked me if I could make an Easter cake. As soon as he said he wanted a silly (rather than serious) cake, I came up with an idea… I loved the style of the drunk robin cake I made at Christmas and decided to make it Easter themed – so instead of drunk robins on a tree trunk, I wanted to make bunnies who’d eaten too many carrots on a raised vegetable bed. My big sister turned 30 last weekend – HAPPY BIRTHDAY BECKY!! I wanted her to a have a really special day and of course, that included making her a birthday cake she would never forget. Like me, she loves baking and decorating cakes so she probably would have liked to make her own, but when I saw a picture of this cake here a while ago I knew straight away that I had to make it for her – she’s a triathlete so what could be more appropriate than a 3 tier triathlon cake?! If she feels that she’s missed out on the baking and decorating, I guess I’ll let her make mine in a couple of years! Click here to keep reading.

sticky toffee cupcakes

I’ve been wanting to make these cupcakes for ages and they were definitely worth the wait. The caramel cream cheese buttercream is probably one of the best buttercreams I’ve tasted for a while – the texture was so smooth and silky and it had just the right sweetness. red nose cupcakeI wanted to make some cupcakes which looked amazing for the bake off in the office yesterday to enter into the showstopper category. I’d looked through my Hello Cupcake book on Monday night but nothing jumped out so I asked Bertie in the office for ideas – she said I should make “the bear”… I think she was getting mixed up with Children in Need! But it did give me the idea of making Red Noses. This year’s noses are pretty cool and even have feet (they’re meant to be “di-nose-saurs”) but I decided making them 100% identical would take too long given I had other stuff to bake too, so I took the simplest one and based it on that. red nose jammy bodgerLast week I saw an email about a cake sale in the office today for Comic Relief so sent an email to say I’d bake something to sell. I then discovered there was a bake off too so I thought if I was going to bake something to sell I might as well enter it into the competition. There were various categories to enter so I decided I would make cupcakes and enter the cupcake and showstopper categories and then if I had time I would bake something for the biscuit category. I managed to finish work slightly early so I had plenty of time while the cupcakes were cooling. Choosing which biscuits to make was pretty easy – for Red Nose Day there’s only one type of biscuit which is suitable… Red Nose Jammy Bodgers!
