I had my parents coming to visit this weekend as well as a few other friends popping over to visit, so this weeks Bake Off technical challenge was perfect, it meant that I had a yummy cake to offer everyone! I make quite a lot of fruit cakes, so I was keen to try this recipe to see how it compares. I have made my own marzipan a few times, but I have never made my own sugar paste, so this would be another thing to tick off the list. Click here to see how I got on.

I bake quite a lot of gluten-free cakes for my running club as there are several people that follow a gluten-free diet, so I was interested to see what this week challenge would be. When I saw that it was bread, all I could think about were the horrible gluten-free flat breads I had tried to make a few years ago, which were like cardboard! On the Great British Bake Off last week, it was bread week. The technical challenge was to make 4 baguettes. I do bake my own bread, but not as often as I would like to and I usually end up making a white, wholemeal or granary loaf for the weekend and to put in the freezer. I bought Paul Hollywoods book ‘How to Bake’ a few months ago and I have made a few things from it, with varying success! So my bread making experience is fairly limited. Sticky Toffee Cupcakes

I’ve been wanting to make these cupcakes for ages and they were definitely worth the wait. The caramel cream cheese buttercream is probably one of the best buttercreams I’ve tasted for a while – the texture was so smooth and silky and it had just the right sweetness. Last week I saw an email about a cake sale in the office today for Comic Relief so sent an email to say I’d bake something to sell. I then discovered there was a bake off too so I thought if I was going to bake something to sell I might as well enter it into the competition. There were various categories to enter so I decided I would make cupcakes and enter the cupcake and showstopper categories and then if I had time I would bake something for the biscuit category. I managed to finish work slightly early so I had plenty of time while the cupcakes were cooling. Choosing which biscuits to make was pretty easy – for Red Nose Day there’s only one type of biscuit which is suitable… Red Nose Jammy Bodgers!
