It’s been a long time since I’ve made a traditional Victoria Sponge but it’s probably one of the first cakes that mum taught us how to make and it’s still a cake I could make without a recipe. I decided to make it a bit more challenging by using 7″ tins rather than 8″ (for some reason I have two 7″ tins but only one 8″ tin!) – I therefore used 3 eggs rather than 4 (and did 3/4 of the rest of the ingredients as well). It was really quick to make – the butter was a bit cold/hard so I creamed the butter and sugar together first rather than doing an all in one method. The jam (made with mum and dad’s homegrown raspberries from the freezer) made way more than I needed and I didn’t have quite enough buttercream. However once it was sliced you couldn’t tell and it tasted delicious. I’m not sure what I’m going to do on Wednesday nights now…
