Celebrating 40 years of marriage is a wonderful occasion, so it had to be a very special cake for two very special people. P1240055.JPGIt’s time for our 1st batch of Christmas baking! As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. A couple of months ago I made my first wedding cake of 2016 and the first since little Emily arrived. The design that Helen and Nick came up with was quite dramatic and worked beautifully with the theme of their wedding. Helen is English, so the cake had some large red roses and Nick is from New Zealand, so some ferns were also included in the design. Click here to see some more pics of this stand out cake.

IMG_0229Just before Christmas last year, a family friend, Emma, asked if I would be able to make her wedding cake. Despite not living near where the wedding was going to be I said yes since it was near my parents so I thought it would be a good chance to go back to my parents for a few days. However, that didn’t happen – instead mum, dad and Becky came up to stay with me for a few days and then took the cake back. Becky even assembled the cake for me! Click here to keep reading.

I’d never made a 100th Birthday cake before, so I was thrilled to be given the opportunity to make one. It was for our close friend’s Granny, who is called Rose, so the request for pink roses on the cake was perfect. The cake was a light fruit cake, a delicious recipe from an old cook book that our Mum has, great for this time of year!  Click here for the recipe.
