Hopefully this will be the first of many Christmas baking blogs this year and as usual there are so many scrummy looking recipes to try out it’s going to be hard to narrow it down. As it’s the last Met League before Christmas I couldn’t resist making some red and gold Christmas cupcakes for the Serpie runners. We haven’t been to any xc races yet this season as we now live quite far away and Rich injured his knee recently which has meant he can’t run at the moment. But after 4 years of not being able to run because of a back injury, I am now able to run 6km so I am very excited to be able to take part! Click  here to try out our first Christmas recipe.

p1240155This year I have been slightly more organised than last year and managed to make and decorate my Christmas cake on time! I wanted to try something different and designed a cake with quilled snowflakes. We learned how to quill icing on our Squires cake course last year, a technique I had never done before. It’s quite therapeutic and fun to create different shapes and fit them all together. Click  here to see my snowflake designs.

Anne and I are still holding up our Christmas gingerbread baking day and it didn’t disappoint this year, can’t think of a more fun way to spent a day than baking with a friend! I never got round to writing about my Christmas cake last year and as I tried a new recipe I thought it was worth adding to our Christmas blogs this year. The recipe was from the Sainsbury’s magazine and was a really lovely moist squishy Christmas cake. Click

here to see the recipe for this yummy cake.

Today I have spent all day decorating my own Christmas cake – it took way longer than planned but I’m pleased with the finished cake. I’ll hopefully post it later in the week, but first, here is a cake I made for the office for a charity raffle last week. Click here to keep reading.
