In case you missed it, the Great British Bake Off started again last week! Becky and I both really enjoyed trying the technical challenges last year so we’ve decided we’ll be doing them again this year. Last year we took it in turns to make them each week but we both decided we wanted to try the technical challenge from cake week – Jaffa Cakes!

Last year for Easter Emma and I were back at our parents for a few days, so we thought it was about time we made a mess of Mum’s kitchen and did some baking! We wanted to do a slightly different take on a traditional Simnel cake, and came across this yummy chocolate orange Simnel cake recipe. The decoration was another idea taken from Pinterest. Last weekend it was Emma’s 30th Birthday party. She had decided on an Alice in Wonderland theme for her party. It was fancy dress too and we had an brilliant afternoon and evening playing silly games and eating plenty of scrummy food. But no Birthday would be complete without a Birthday cake! As Emma made me an amazing surprise cake for my 30th, I had a lot to live up to, so after several months of planning I found a design that was perfect that I could adapt for her cake. Mince Pies

It’s about time we put some mince pies on the blog! If you only bake one thing this Christmas, have a go at these, they really are super, especially when they are warm straight out of the oven with a cup of tea. This recipe is from Josceline Dimbleby. This year I can’t make enough mince pies, I think I have already baked over 60, some are in the freezer ready for Christmas and the rest have been taking into the office as well as having a a few left over for an afternoon snack. Cashew Nut Macarons with an Orange and Cardamom filling

After my successful attempt using hazelnuts to make macarons rather than ground almonds the other week, I decided I would try another nut. Next on the list were cashew nuts – mainly because I had a couple of bags in the cupboard. As well as experimenting with the recipe I was also experimenting with my new camera – for my birthday I treated myself to an SLR camera. I was playing around with all the settings to work out how to use it, so I ended up with loads of photos which are all only very slightly different! So over the next weeks some of the photos might be slightly experimental… But hopefully better than the ones which I’ve been taking on my phone until now! Right, back to the macarons….
Orangeade Cupcakes

Last week, I played in a uni hockey tournament after work. The day before I asked people in the office what flavour cupcakes I should make to keep us going. James suggested “Lucozade” and Kiri suggested “half time orange” cupcakes. So I went with Orangeade – I bought a sample pack of Soda Stream syrups when I made some Cola cupcakes a while ago and I hadn’t used any of the other flavours yet so I decided to give the orange one a go. For the “trick or treaters” that came to my house this evening, at the weekend I made some Halloween biscuits. I made cats, ghosts, pumpkins and owls – but I ran out of time to decorate them all so I only finished off the ghosts and cats in time. Maybe I’ll get around to decorating the others this weekend!
