Things have been slightly crazy recently, hence the lack of blog posts. We’re in the process of moving to Newcastle! A couple of weeks ago I left the job I’ve had for the past 7 years. I used to bake fairly regularly for the office (most of the comments in my leaving card were cake related!) and on several occasions I made cakes for others when they left. However, I’d never worked out what I’d make for my own leaving cakes. It took me a while to work out what to make but eventually I settled on these!
I came across these a while ago on one of my favourite blogs – Raspberri Cupcakes. It was the GIF that got me. I wanted to make them straight away. But luckily I managed to restrain myself and decided to save them for a special occasion. They worked perfectly – apart from dropping one of the trays of macarons on the floor after I got it out the oven (luckily only a couple were damaged).
I decided that I was going to bake my own cookies since I wanted to make some small Cookie Monsters and couldn’t buy cookies small enough. I made a standard chocolate chip cookie dough and used a tiny pinch of cookie dough (about pea size) to make each of the small cookies, and a slightly bigger pinch for the cookies for the large macarons. I baked them at gas mark 3 and checked them every couple of minutes until they were done.
For the macarons I made some plain macarons and coloured them using royal blue gel food colouring. After I’d piped them out I sprinkled them with blue sugar sprinkles and left them to dry out for about an hour before baking them.
After the cookies and macarons had cooled down, I paired the macarons up and piped dark chocolate ganache onto one shell. I then stuck a mini cookie half onto the ganache and then topped with the other shell. Finally I used some white chocolate ganache (I had some to use up in the freezer – you could use royal icing instead) to pipe on some eyes and finished them off with a couple of dots of black icing.
I finished work a few weeks ago and I’ve now got the next 6 weeks off to catch up on things like my blog. So watch this space for more blog posts and some exciting changes which are coming to the blog soon…
