It’s been a while since I last did a post. It’s not that I haven’t baked anything, it’s more the fact that Tom came home – despite the fact he seems to be working constantly I suddenly have less free time! Anyway, I made this cake last weekend, with my sister. It was for our great Aunt’s 90th birthday – happy birthday Auntie Joan! We didn’t want to do just a plain sponge so the cake was lemon & poppy seed with a raspberry curd filling and a lemon buttercream – it was very light and delicious.
Auntie Joan met her husband to be, George (a G.I.) during WW2 and moved to America with him in 1946 – we used this as our inspiration for the cake decoration. I still can’t believe how amazing she is – even at the age of 90 she still made the trip over to England and is coming back again at Christmas!
We had a great weekend of celebrations – a BBQ on the Saturday night and a family lunch on Sunday at a restaurant nearby followed by tea and cake back at Grandma Mary’s house.
Becky made the army girl and I decorated the cake like a flag. It took way longer than we thought – probably because we did so much talking!
The cake was really good. I used a recipe from Annie’s Eats, which I’ve made before. We baked the cake in 2 tins which were 6″x10″ and then sliced each in half to create 4 layers to maximise the amount of raspberry curd. We still didn’t manage to use up all the raspberry curd so I came up with a muffin recipe to use it up (recipe to follow soon).
