
Earlier on this year we decided to pick a country each and then cook traditional food from that country for a whole week. It took quite a lot of planning and research, but it was really good fun and definitely something we will continue to try every so often. Tres Leches cake is a traditional Mexican cake made with 3 types of milk, I decided to try a cupcake version and used them as the end of term gifts for the girls teachers, along with some bright coloured decorations.

This is the recipe I used. The sponge was amazingly light because of whisking the eggs and sugar, the 3 milks are then mixed together and poured over the tops of the cakes so they soak in and give them a delicious sweet milky taste. I probably wouldn’t ever have tried making these if we hadn’t have had a Mexican cooking week, so it was great to discover a new delicious recipe!
