Last year Em gave me a beautiful wooden pinecone biscuits mould for Christmas and I thought I would try it out and make some lovely pinecone biscuits as gifts for some friends. Click here to see how I got on!
I found a scrummy sounding recipe to make these pinecone biscuits and sandwich them together with pistachio buttercream, the pictures look amazing. The recipe can be found here. Unfortunately my pinecones didn’t work at all, they spread out and puffed up and completely lost all their definition, so I used the rest of the mixture and cut out circles to sandwich together instead.
The recipe is absolutely delicious though, especially with the pistachio buttercream in between. I’ll definitely be giving the pinecones another go one day when I have more time and patience!
