
I love combining recipes or using them in a slightly different way, so when I saw the cover recipe on November’s Sainsbury’s Magazine for chocolate lebkuchen I thought they would be perfect to turn into ice cream sandwiches and decorate them as Christmas puddings! Click here to see the recipe.

The recipe from the magazine can be found here. I halved the recipe and used a 5.5cm round cutter to cut some circles, I made 12 biscuits from the mixture. Once the biscuits had cooled I placed a small scoop of homemade vanilla ice cream on one biscuit and placed a second one on top, squashing it down. I then used a palette knife to smooth the edges before putting them straight into the freezer to firm up.

Once they were firm I melted loads of white chocolate and dipped the ice cream sandwiches half way into the white chocolate before adding 3 red balls for the berries and 2 holly leaves that I made made from some left over green florists paste. I would recommend leaving them in the freezer for at least 24-48 hours so the biscuits soften up a bit, so the ice cream doesn’t all squish out when you bite into them. The girls absolutely loved having these for pudding!
