
We all absolutely love any kind of gingery cake in our family, so I was very happy to see this as the technical challenge. I have made lots of different types of ginger cake, but I can’t remember ever making Parkin, so I was keen to try it out. Click here to keep reading.

The recipe was very easy to follow, I love how dark and rich the cake smells because of the treacle. The recipe can be found here. I enjoyed making the crystallised ginger, similar to making candided peel and it was very fiery compared to the crystallised ginger you buy, delicious!

I think the ginger was a bit strong for Chloe but Emily absolutely loved it. The cake kept really well for a week and the sticky outside definitely improved after a few days, perfect autumnal treat.
