It’s been a while since I made cupcakes, but like buses, two cupcake-making occasions came along at once last week so I spent Thursday night making cupcakes – firstly some leaving cupcakes, then some birthday ones. These are the leaving ones. I decided I wanted to make some which would say “miss you” or “goodbye” so I chose to make biscuits to go on top decorated as Love Hearts.
Given that I had to make and decorate two different types of cupcakes I decided to keep them fairly simple and made 24 plain vanilla cupcakes with a swirl of buttercream on top (click here for the recipe – 1 and a half times the recipe will give you 24) and then orange biscuits to go on top (click here for the biscuit recipe). I cut out and baked 24 round biscuits (about 4-5mm thick) because I was going to make 24 “Love Hearts” but ended up cutting flowers out of half the biscuits because I thought it would be quicker than turning them all into “Love Hearts” – I don’t think it did actually save me any time though!
In order to decorate the biscuits as “Love Hearts” you need some fondant icing, royal icing, food colouring, a piping bag and a Wilton number 1 nozzle (very small plain nozzle).
- Firstly, divide the fondant icing into 6 and using a very, very small amount of food colouring, colour each piece a different pastel colour – I went for white, yellow, pink/orange, purple, blue and green.
- Dust a work surface and rolling pin with icing sugar and roll each coloured icing out to 1-2mm thick and then cut out circles the same size as the biscuits.
- Stick a circle of icing to each biscuit using a bit of royal icing.
- Colour the rest of the royal icing dark pink and pour into the piping bag.
- Gently press a heart shaped cookie cutter into the fondant icing on each cookie to create an indent which you can pipe on top of to create the heart.
- Pipe whatever words you chose in the middle of each heart to finish off your “Love Hearts”.
