Two of the partners in my team at work moved to London earlier this summer, so for their leaving do, their P.A. asked if I could make them some London themed cupcakes. Given I was making quite a lot of them I decided I needed to keep the design simple. London Underground signs seemed like a good choice and I was able to make them in advance. I didn’t decide how I was decorating the chocolate cupcakes until the night I made them!
I made all the underground signs a couple of days before because I wanted them to dry out before I put them onto the buttercream to stop the colours running. However, in the end I covered the cakes in fondant icing so the colours wouldn’t have run. I piped the names of various tube stations onto the blue strips I’d cut out – I had to pick stops with short names so that they would fit on!
For the chocolate cupcakes I cut out some small hearts from the left over red icing after I’d made the tube signs, and put one in the centre of each cupcake. All that was needed to finish them off was some piped writing so they said “I love London”.
It has taken me a long time to put something on my nieces blog, but finally I have now been able to look at all the amazing cakes that Emma has made over many months. I think she is extremely talented and it appears that she can turn her hand to making cakes of all descriptions and subjects! I love the baby boy ones, golf and Wimbledon cakes especially. Goodness knows what creations Emma will be making for her sister’s Hen Party and Wedding!
