The last week or so has been chock-a-block with baking. I’ve lost count of how many large cakes I’ve made. But before I add them to my blog I thought I’d share a recipe with you, while I can still remember what the ingredients are!
I decided I wanted a break from cakes so for Tom’s hockey match today I have made a batch of Toblerone cookies. It’s also given me an excuse to spend over an hour playing around with my new toy. I think I took about 200 photos of these. I was playing around with the settings in different rooms to work out how to use it. I think that I probably got fewer than 10 decent photos out of the 200… pretty poor but on the plus side I think I learnt a lot so hopefully my photos might start to get a bit better soon.
I’ve tried a few recipes for Toblerone cookies in the past but I decided I’d just have a go at throwing some ingredients together for these. I’m in the chewy cookie camp – I prefer my cookies to be chewy in the middle. I’ve read quite a few recipes which say that adding a bit of cornflour keeps cookies chewy so I decided to give it a go. I can confirm it works!
Toblerone Cookies (a Gloverly Cupcake creation)
Makes 10 – 12
125g soft light brown sugar
50g unsalted butter, softened
1 large egg
1 tsp vanilla extract
150g plain flour
1/2 tsp baking powder
2 tsp cornflour
pinch of salt
200g Toblerone roughly chopped
Line 2 baking trays with baking parchment and preheat the oven to gas mark 4 (180 C/350 F)
Beat the butter and sugar together until light and fluffy. Add the egg and vanilla and beat until well combined and light and creamy.
Stir in the rest of the ingredients and place 5-6 blobs of cookie dough on each tray – they spread out quite a bit so make sure there’s plenty of space between them. You may need to use more than 2 trays if there is not enough space.
Bake in the oven for 15 minutes – check them and turn them around after 10 minutes.
Take out and leave them to cool on a wire rack.
