Our parents have a bumper crop of plums this year, so I decidedout some new plum recipes. I think this one was from an old Waitrose magazine, it sounded really good and I had all the ingredients in the cupboard, so thought I would give it a go.
Plum and Almond Cake
150g Self Raising Flour
100g ground almonds
175g butter softened
150g caster sugar
3 eggs
1 tsp almond extract
300g plums, stones removed and chopped
Topping:
6 tbps plum jam
3-4 ripe plums sliced
Toasted flaked almonds to scatter on top
- Pre-heat the oven to 160 degrees centigrade, grease a 900g loaf tin (or some mini loaf tins)
- Place the flour, ground almonds, butter, sugar, eggs and almond extract in your mixer bowl and beat all the ingredients together for a few minutes until light and fluffy.
- Add the chopped plums and stir through evenly.
- Spoon into the prepared tin and bake for 1 1/4 – 1 1/2 hours or until cooked and a skewer inserted into the centre comes out clean.
- Cool in the tin for 10 mins until cool enough to remove and place on a wire rack.
- Before serving, warm and sieve the jam, brush over the top of the cake, arrange the plum wedges on top and brush lightly again. Scatter with the toasted almonds.
The cake is deliciously moist and has a lovely sweet almond taste. Great with a cup of tea in the afternoon!
