A few weeks ago I made some cupcakes to take to the Leeds office when I went down for the day. I was planning on making them again to take to work but I was too busy/tired and then got ill. I didn’t get any good photos of them so I realised that if I wanted to put them on the blog I’d have to make them again… what a shame!
They are quite simple to make – a chocolate cupcake with a swirl of chocolate buttercream, a lump of icing for the face and then some marshmallows! Sticking the marshmallows on is the most time consuming part. If the air is dry/it’s too warm I found that the buttercream dried out quite quickly so I had to pipe one cake at a time to put the marshmallows on. The faces were made from a ball of black icing made into an egg shape, with 2 small ovals stuck on the top for the ears. I used the end of a pointy tool to make the nostrils and then stuck 2 white balls in for the eyes. Finally I piped a tiny dot of black royal icing into the middle of each eye.
