Having watched quite a few of the Bake Off contestants struggle to make these, I was really dreading trying them and wondering just how difficult they really are to make. I didn’t have much time either, so it really did feel like a proper technical challenge. The recipe can be found here.
The 1st two cookies I baked were slightly too thick and under baked – they stayed really soft. Luckily there was plenty of mixture so I had more than enough to get 12 reasonable good looking ones. It was definitely harder to judge with the orange ones whether they were cooked or not because of the colour. I had a few that stayed soft, so I popped them back in the oven after they were folded for a few more mins and they crisped up nicely. They definitely won’t be the tastiest technical challenge, but they are certainly a bit of fun – lets hope my parents think so when they read the fortunes inside!
