We’ve had a really busy couple of months with various wedding cakes and visiting friends and family, so I made the most of a quiet 20 mins earlier while Emily was watching Stickman to write about the cupcakes I made for everyone when we visited friends this weekend. The wedding cake I made a couple of weeks ago had 2 tiers of coffee cake in and I tried a Hummingbird recipe that sounded like it would give an amazing coffee hit. The cake was so good that I decided to make some coffee cupcakes for this weekend too. Click
Espresso Cupcakes
Makes 16
240ml milk
20g instant espresso powder
80g unsalted butter
280g caster sugar
240g gluten free self raising flour
1 tbsp baking powder
1/4 tsp salt
2 large eggs
Line 2 muffin trays with 16 cases. Pre-heat the oven to 170 fan.
Mix the sugar, flour, butter, baking powder and salt together in a stand mixer (or rub in with your hands) until the mixture resembles fine breadcrumbs.
Warm the milk, then add the espresso powder and stir till it dissolves. Once cooled, beat the eggs into the coffee milk mixture and then gradually beat into the dry ingredients until smooth (ensuring that you scrape down the sides of the bowls after each addition).
Divide the mixture evenly between the 16 cases and then bake in the oven for 18-20 minutes until they are lightly browned on top and spring back when pressed (and a skewer comes out clean). I usually check them and turn them around after 15 minutes.
Take out the tins immediately and leave to cool on a wire rack. Decorate once completely cool.
Espresso Butter cream
50ml whole milk
16g instant espresso powder
500g icing sugar
160g unsalted butter
Beat the icing sugar and butter together on a very slow speed until the mixture resembles coarse breadcrumbs. Warm the milk slightly and dissolve the espresso powder in the milk. Then slowly add the coffee/milk mixture to the butter and icing sugar. Once it’s all been added increase the speed and beat on high for 5 minutes until light and fluffy.
I decided to decorate the cakes with a lady bird theme as it’s starting to feel quite summery now! As we were visiting some of Rich’s uni friends and their family’s, there were plenty of adults and kids who will enjoyed the theme. I baked vanilla and chocolate chip cupcakes for the kids as these coffee cupcake really are very strong!
So yummy it is 🙂
