
Having warm muffins for breakfast is always a popular weekend treat in our house and these have a really lovely Christmas flavour. The squidgy warm marzipan pieces inside are very yummy. So why not give these a try, click here to see the recipe.

Here’s the recipe:
200g self raising flour
1/2 tsp bicarbonate of soda
50g ground almonds
75g caster sugar
60g flaked almonds
50g marzipan chopped into small pieces
2 eggs
150ml yoghurt
4 clementines zest and juice from 2
75ml rapeseed oil
Icing sugar for the glaze
Heat the oven to 200C or 180 fan, line a 12 hole muffin tin with paper cases (or just 8 if you like slightly bigger muffins!)
Sift the flour and bicarbonate into a bowl and stir in the ground almonds, sugar, flaked almonds and marzipan.
Add the beaten eggs, yoghurt, clementine zest and oil, stir until the mixture is just combined, don’t over mix or the muffins will be tough.
Divide the mixture between the cases and bake for 20-25 mins until a skewer comes out clean.
For the glaze, mix some icing sugar with the clementine juice till you have a runny glaze and drizzle over the muffins.
These were lovely and light and had a wonderful clementine flavour, perfect treat for breakfast!
