I volunteered to make some Christmas cupcakes for Emily’s Rainbow’s group for their final session of the year as they were having a Christmas party. Emily requested something with snowflakes, which is good as they were quick and easy to make. I also made the same for her teachers as Christmas presents too. Click here to find out more.

I made a big batch of vanilla cupcakes and some vanilla buttercream which I coloured with ice blue colouring. I probably added a bit too much food colouring but they reminded Emily of Frozen, so she was super happy!

I used a mix of sugar florist paste and normal sugar paste to make the snowflakes, so they kept their shape but didn’t go too hard and crisp. They were left to dry for a few days before I made and decorated the cakes. The cupcakes went down well and were a nice treat for the Christmas party!
