
I’d love to have more time to try some patisserie stuff, I love watching Bake Off the Professionals and seeing some of the amazing patisserie things they do. It’s all so precise and they have lots of clever equipment too! These deserts were perfectly timed with Rich’s Birthday, so they made a tasty treat for pudding on Saturday night. Prue’s recipe can be found here. I made it all in stages when I had the time, so the pastry rings were made on Friday morning, the mouse on Friday afternoon, the jelly and tempered chocolate on Friday evening and then the rest on Saturday afternoon.

The pastry was very short and it was hard to pick up the long pieces and put inside the rings without it breaking. I only had 8cm crumpet rings, so the mousse and pastry were both made using 8cm rings, rather than 8 cm for the mousse and 9cm for the pastry. So I had to cut the mouse using a smaller circle cutter so it would fit into the circle of pastry. And it also meant that they were smaller than they should be, so when I piped the cream and added the raspberries there wasn’t quite as much space as there should have been. But it meant that we had various extra left over bits and off cuts, so plenty for Rich and I and for the girls to enjoy too on Saturday and Sunday night. They were really delicious, the chocolate hazelnut mousse was amazing, the raspberry flavour was disappointing, but they aren’t seasonal at the moment. These definitely weren’t the neatest thing I have made, but with they tasted pretty good!

Are you kidding? These were as neat as those on the show if not better. What a gift you have. I enjoy your posts as much as seeing them done on the show. I only wish I could try all these treats. I wouldn’t even attempt these.
