
I can’t believe there are only 10 days till Christmas, I’m not sure where the time has gone! Finally getting round to doing some Christmas baking and really enjoying trying out some new recipes. Making fudge is a really simple easy thing to do for homemade Christmas presents and it keeps for ages, so it’s perfect for giving to friends and family over the next couple of weeks. I saw a recipe on Pinterest for Oreo chocolate peppermint fudge and adapted it to use some amazing flavoured icing sugar I bought over the summer. Sugar and Crumbs make some incredible flavoured icing sugars and their website has loads of recipes to make using them. I made an Oreo cookie base with butter and crushed Oreo’s, then topped with the fudge and finally covered with white chocolate and red and white sprinkles. The fudge recipe can be found here.

The Oreo base was made from 200g of Oreo biscuits (without the creamy filling – split them in half and scrape it off), blitzed in the food processor, then add 80g melted butter. Press into the bottom of a lined 20 x 20cm square tin, leave to set in the fridge.
I then made one batch of the fudge and poured it onto the Oreo base. Once it was set I melted 200g white chocolate with 1 tbsp of vegetable oil (so it’s slightly softer and cuts without cracking) and poured this over the top. Once it had cooled slightly I sprinkled it with red and white sugar balls. When the chocolate had hardened I removed it from the tin and cut it into small squares ready to pop into bags as pressies. Luckily a few of the pieces got a bit broken, so we managed to sample some, it was delicious!
