
I love the idea of popping some gingerbread men into some rocky road, such a fun idea! I made a big batch of gingerbread the other day, so have been using it to make various things including the gingerbread men for this rocky road, it’s so Christmassy and makes the house smell amazing when it’s baking. We all absolutely love rocky road in our house, so these won’t last long! Here is the recipe.
Ingredients
150g Butter
800g Milk Chocolate (split into 600g and 200g)
4 balls of stem ginger, finely chopped
4 tbsps stem ginger syrup
4 Tbsp Golden Syrup
250g Gingerbread biscuits
150g Mini Marshmallows
100g Mini Gingerbread Men
Gingerbread Men Sprinkles
Melt the butter, 600g of chocolate, ginger syrup and the golden syrup in a heavy-based saucepan.
Put the gingerbread biscuits into a bag and bash them with a rolling pin. You are aiming for a mixture of crumbs and pieces of biscuits.
Fold the bashed biscuits and chopped stem ginger into the melted chocolate mixture in the saucepan, once it has cooled slightly, then add the mini marshmallows. If you add them when the chocolate is too hot they will melt.
Tip into a greased/lined traybake tin (aprox 34cm x 20 cm) and flatten as best you can with a spatula.
Break the small gingerbread men in half
Melt the remaining 200g of chocolate in a microwave or over a bain marie and drizzle it over the top of the Rocky Road.
Push the dismembered gingerbread men securely into the Rocky Road and top with Sprinkles.
Refrigerate for at least a couple of hours or overnight before cutting into chunks.
