Once again I didn’t get round to putting up photos of the Easter cake I made 2 years ago. I wanted to make something quick and easy as well as something that the girls would love too. Click here to see some more photos of this funny cake.
I decided not to make a simnel cake, instead I saw an amazing looking recipe for a coconut and pecan cake. It sounded so good that I had to make it! The recipe can be found here.
The cake was a lot of fun to make and relatively quick compared to some of the crazy cakes I have made! And the recipe was amazing too. Because of the shape of the cake we ended up with quite a few off cuts that we enjoyed before Easter.
