
I love being asked to do cakes for the girls friends, kid’s Birthday cakes are always so much fun and creative! A couple of weeks ago I made a mermaid cake for one of Chloe’s friends, click here to see some more pics.

I’ve only used silicone moulds a few times as I usually enjoy making my own decorations, but the shells and starfish for this cake looked really realistic made with the moulds that I bought some and had a go with them. I’ve had mixed results in the past, but these were really good. I made them using sugar florist paste and then waited till they had dried before dusting them in various pinks and purples and then a pearly shimmer dust over the top. The mermaid tail was also made using the silicone mould. I made the purple twisty seaweed with strips of sugar florist paste that I rolled out and cut long tapered strips which I carefully twisted before letting them dry on a flat surface to keep them nice and straight.

The cake was a tall 7” chocolate cake sandwiched with chocolate ganache buttercream and then covered with a thin crumb coat of the chocolate ganache buttercream before another thin coat of pale turquoise vanilla buttercream. This was left to firm up in the fridge for an hour before I made more vanilla buttercream and divided it into 4 bowls and coloured each one a graduated turquoise colour. Starting at the bottom I spread the darkest buttercream first and carried on up the sides of the cake using the next lightest colour until I reached the top. I then used a scraper to smooth it out and help blend the colours to create the ombré effect. Finally I added lots of little white sugar balls for the bubbles (both to the cake and the rest all over the kitchen floor!)
