A few weeks ago I wanted to make some cupcakes to take over to my friend Jen’s for her mini “hen weekend”. They needed to be suitable girly but I didn’t have a huge amount of time to make and decorate them. So I decided to make these – inspired by some my sister made for a hen do!
I made the cupcakes on the Friday night after going to the pub – somehow, even after a couple of drinks, they still turned out ok. After having a lie in, I then had hardly any time on Saturday morning to decorate them so I looked at what I had in the cupboard and found some sugarpaste roses and some cake lace which I made a while ago, some pale pink and white pearl dragees and a pack of fondant icing.
In order to decorate them, I covered each cupcake with buttercream in a dome shape and then put them in the fridge to firm up. I colour some fondant icing and then rolled it out so it was fairly thin, and cut out circles big enough to cover the cupcakes. I put a circle of icing on top of each cupcake and smoothed the edges down to the top of the case. I then decorated each one with cake lace, sugarpaste roses and sugar dragees, sticking them in place with a small amount of royal icing.
