Word of warning – if you make these cupcakes you might end up with a speckled kitchen too!
I’ve been away for the week in South Wales. This means I’ve been eating out every night and not been able to do any baking. So when I got up this morning I decided to bake some cupcakes for Tom to take to hockey. I only had a couple of hours so kept them simple – vanilla cupcakes with a swirl of vanilla buttercream.
I then decided to make them Easter themed since it’s the last match Tom will be playing before Easter. I mixed some cocoa powder with a bit of warm water until it formed a paste. I thinned it gradually by adding more water until it was quite runny – you can keep testing it to see how well it “flicks”. I dipped a fat paintbrush into the cocoa water and then flicked the bristles with my finger to spray it over the tops of the cakes. To finish them off I topped each of them with 3 mini eggs.
