A couple of months ago I made my first wedding cake of 2016 and the first since little Emily arrived. The design that Helen and Nick came up with was quite dramatic and worked beautifully with the theme of their wedding. Helen is English, so the cake had some large red roses and Nick is from New Zealand, so some ferns were also included in the design. Click
I love the idea of having each tier in different graduated colours. I used an edible silver spray for the middle tier and used the same on the ferns. For my Birthday this year Rich bought me a photographers tent that a friend had recommended I use to put cakes in when spraying them (as at Christmas I managed to cover the entire kitchen in a thin film of navy food colouring!) It was a brilliant idea and stopped all the tiny particles of silver spray from covering the kitchen.
I love experimenting with new techniques and designs and this cake was very different from all the others I have done. I had never made ferns before either, so I did some research and found a fern cutter. It was quite fiddly to use and although I cut them out quite thick, they were very fragile.
This is definitely one of the most dramatic cakes I have made and I really enjoyed doing it. Congratulations to Nick and Helen!
