It’s not long till the bake off final, so only a few more weeks of technical challenges left. I’ve got a very busy few weeks, so it’s a good job that last weeks challenge was a quick and easy one! I have to confess I didn’t grind the spices by hand, I saved time and put them in my spice grinder. The recipe can be found here. The recipe said to divide the dough into 6 x 75g and 6 x 85g, but if you add the weight of the ingredients together and the weight of the eggs, there isn’t enough. I managed to get 5 of each with a small amount left over so I managed to taste some.
Shaping the dough was the trickiest part. I made sure I rolled everything out to the same length to ensure that they all looked the same. I ended up baking them for a bit longer than they suggested as they were still quite pale when the time was up. It was great to see lots of Serpies at the 1st xc of the season and hopefully they enjoyed their post race jumble!
