I bought a set of star cookie cutters several years ago to make a star cookie tree and never got round to using them, so I thought instead of making a gingerbread house this year I would make a tree! Anne and I are still holding up our Christmas gingerbread baking day and it didn’t disappoint this year, can’t think of a more fun way to spent a day than baking with a friend! Click
I made our usual gingerbread recipe, which can be found here. I did some of it gluten free but not all of it. Although there was a lot to cut out and bake it was easy using the cutters rather than making templates and cutting it out by hand.
Emma came up with an amazing idea of cutting a circle out of the middle of each star so that when they are all stacked up I could hide some LED lights in the middle. To enable the lights to shine through I used 5 small balls of sugar paste in between each layer so there were gaps for the light to shine through and to make the tree taller. There probably weren’t quite enough bulbs on my LED lights and it was a bit fiddly to do without breaking all the decorations off!
I decided to decorate with mostly chocolate this year and some gold and pearl decorations as well as a bit of crystallised ginger. When the lights were turned on the tree looked really warm with the gold colours. Definitely a pretty alternative to a traditional gingerbread house!
