I feel like I might be overdoing the gingerbread baking a bit this year! But it’s so Christmassy I can’t resist! I saw this recipe in the Waitrose magazine last Christmas but didn’t get round to making it. It’s a recipe from John Whaite (who won GBBO in 2012) and it’s a perfect Christmas flavour combination of gingerbread and mincemeat, yummy! Click here to see the recipe.

So this is a slight change to the normal ‘Technical Challenge’ which we do each week, and that’s because the last technical challenge was a bit odd. I don’t mind trying something new but I didn’t want to have to buy random spices and moulds which I probably wouldn’t use again, just for the sake of a challenge. The other option was improvise, but given it was spice week, not having the right spices seemed to defeat the purpose. I bought a set of star cookie cutters several years ago to make a star cookie tree and never got round to using them, so I thought instead of making a gingerbread house this year I would make a tree! Anne and I are still holding up our Christmas gingerbread baking day and it didn’t disappoint this year, can’t think of a more fun way to spent a day than baking with a friend! Last weekend Becky came up to stay for a long Christmassy/girly weekend! Of course, the weekend involved plenty of baking. I’ve got so many things to blog about and not enough time! I made these a couple of weeks ago with Becky when she came to stay. I’m having a baking weekend (again) this weekend and I made these (…again!) so I guess it makes sense to blog about these next. I’m baking Christmas presents for people this year and one of the things I’ve decided to make are mini gingerbread men and snowflakes – hopefully I’ll find time this weekend/next week to blog about the other things I’m making.
