
I saw this recipe in the Waitrose magazine last Christmas but didn’t get round to making it. It’s a recipe from John Whaite (who won GBBO in 2012) and it’s a perfect Christmas flavour combination of gingerbread and mincemeat, yummy! Click here to see the recipe.

The recipe can be found here. The gingerbread has a really lovely combination of spices and smelt amazing when I was making it. I used my homemade mincemeat which is made from Delia Smiths recipe, I always make the same one as it’s the best!

The recipe was easy to make but did take a bit of time to do, with the stuffing and re-rolling and re-cutting once the tops had been put on, but worth it. And then icing is amazing too, these are delicious and a definitely taste of Christmas!
