This year I have been slightly more organised than last year and managed to make and decorate my Christmas cake on time! I wanted to try something different and designed a cake with quilled snowflakes. We learned how to quill icing on our Squires cake course last year, a technique I had never done before. I haven’t made a square Christmas cake for a long time, so thought it would make a nice change. I also thought I would use Delia’s recipe and try it gluten free, it seemed to bake pretty well, but we’ll have to wait till Christmas to eat it.
I marzipanned and iced the cake and stacked it at a bit of an angle so that when the snowflakes were added it wouldn’t be too uniform. I worked out how many snowflakes I would need and started making them. I bought a Wilton cutting wheel to ensure that all my strips were the same width.
They were pretty time consuming to make, but was really pleased with the results.
I dusted the entire cake with a pale gold shimmer dust and then glued the snowflakes in place. Unfortunately the large one decided to dive off the top of the cake and smash on the floor, so I had to re-make it.
Around the base of each snow flake I added some large and small sugar pearl balls (glued on individually and positioned with a pair of tweezers) and some gold dust to add some texture for the finishing touches.
