I was really looking forward to making this weeks technical challenge – I love peanut butter! We invited our friends Matt and Beckie over for dinner on Saturday night and I planned to do the technical challenge for pudding,
To make them even harder I had to make 1/3 of the recipe gluten free for Rich (there were four of us for dinner and Rich and Matt had decided they were going to have 2 puddings each!) and I wasn’t sure they were going to work. The recipe was very straight forward, melting chocolate, some whisking and then folding it all together. Paul’s recipe can be found here.
I divided the mixture up and added gluten free flour to 1/3 and normal flour to the other 2/3’s. Then put the mixture in the prepared moulds, added the peanut butter and rest of the mixture and then put them in the oven.
I checked after 8 mins and they were definitely not cooked so left them another 2 mins and took them out. They had risen nicely! I didn’t find it very easy to get them out of the moulds, so by the time I had managed to take them all out and then cut one open for a photo they had continued cooking and weren’t as gooey as I had hoped. They still tasted scrummy and were surprisingly light, a bit like a soufflé.
