I was a bit disappointed with last weeks challenge as it was another one that was hard to replicate at home without the special equipment. So I decided to make it anyway but made flat pancakes instead of the balls. The flavours sounded really good, so I was still keen to have a go. Click
It was quite a relief to do a challenge that was quite quick, especially compared to some of them. I’ve had a busy couple of weeks with sorting out Emily’s new room and her Birthday party, so baking her a special Birthday cake has taken priority. Luckily this was easy to do and we had them for pudding last night. Paul’s recipe can be found here.
The recipe really was quick and although I didn’t get to attempt to make the balls, I spread a bit of pancake mixture into the pan, then put a spoonful of the apple mix on top, followed by a bit more pancake mixture to enclose it. They worked really well and were very yummy, although super sweet with the apple filling and then the dipping jam too!
