I was very excited about making the technical challenge for dessert week as my parents were coming to stay this weekend, so it gave us the perfect excuse to make something special! And with 6 portions it meant that Rich and I could try it on Friday night and there would still be 4 for Saturday night, as well as saving a tiny bit for a mini one for Emily. Click
Emily really enjoyed helping with some whisking and weighing out all the ingredients as well as using the rolling pin with the special spacers on the end to roll the dough to 2mm. She even managed to help sieve the mango puree and the raspberry puree too. I love how much she is enjoying helping me and getting excited about watching the bake off each week. She’s better than me at remembering everyone’s names!
The desserts looked really pretty but they were just so small! My glasses were a little bit big, but even so, it was a tiny dessert and could definitely have done with doubling the recipe for the 6 portions. Especially as the layers were quite thin and to be able to taste each layer it would have been nicer if they were thicker. The flavours were lovely though, I really loved the lime and coconut streusel on top and they really did look very pretty!
