This week has been super busy as it was Emily’s 4th Birthday on Sunday, so all my baking energy went into creating a crazy rainbow coloured unicorn cake for her! This was a bit of a last minute decision to make it for dinner on Monday night as Em was coming to stay for the night, so a great opportunity to make it together and then eat it for dinner. Click
I was hoping Emily might help with the filling, but the onions we used were so strong that they made her eyes sting when she started peeling them, so she didn’t want to help! So I got on and made the rest of the filling before the girls bed time. The recipe can be found here. Once they were in bed it was time to have a go at making the brick pastry. I didn’t have a non-stick flatbread pan, but thought I might use my cake lifter as it looked about the right size. Unfortunately it wasn’t very non-stick so I struggled to get the layer of thin pasty off. So instead I tried a large flat bottomed non-stick pan, which was much better.
Unfortunately Em had a lot of work to do, so I ended up making all the layers of pastry – but actually it was only really a 1 person job anyway, especially with only one pan to use. It took much longer than I thought – 2-4 mins per layer wasn’t long enough. I think the non-stick pan just took longer to cook the pasty so by the time I finished the pastry, lined the tin and then added the filling it was 9pm! We didn’t end up eating dinner till nearly 9.40pm in the end. Was it worth the wait? The flavours were lovely, but next time I’d save the hassle and buy filo pastry, so much easier!
