I finally got round to making these last week after a slight delay due to us all catching a tummy bug, thankfully we are all recovered and our appetites have come back! None of us like blue cheese, so I decided to make these with cheddar and some left over Comte instead. Click
I managed to make the crackers very quickly before I collected the girls from nursery, they really were very quick and easy to make and the combination of the seeds and salt on top was really tasty. Then once the girls were in bed I made the souffles. I’ve only every made one souffle before and that was the large chocolate one from the GBBO a few years ago. But it was surprisingly easy, I was a bit worried that the cheese sauce was a bit thick to fold the egg whites into, but it seemed to work ok. Despite looking pretty messy just before they were baked for the second time, they came out really well and tasted absolutely delicious, I’ll definitely be making these again!
