
It was Emily’s 6th Birthday party last weekend, so I didn’t have time to do the technical challenge as I was busy making and decorating her Jungle Book themed cake (coming soon!). So after a busy 2 week half term and kids party I decided to treat myself to some baking! I absolutely love Baklava but rarely eat it and have never attempted to make it, let alone make filo pastry, so it was great to give this a go. Click here to see how I got on.

Paul’s recipe can be found here. It was easy to follow, but very time consuming. Rolling out the pastry first time round and dusting with cornflower was good fun and very messy! The second round of rolling out into 30cm circles was much harder, but I managed it and assembled it in the tin.

The hardest part was marking out the design. I scored the top very lightly to start with to make sure I got the correct pattern, then once I was happy I cut all the way through. It had to be done very carefully as the pastry on top moved quite easily especially once it had a few cuts in it.

It smelt really good as it was baking, super buttery and sweet! I found there was probably a bit too much syrup and the middle ended up a little bit soggy on top as I think lots of the syrup had run into the middle. But it tasted wonderful! It’s absolutely enormous, luckily I am meeting some bake off loving friends tomorrow and family on Saturday so plenty to share around!
