
We were really looking forward to dessert week on the Bake Off, especially having seen the clip the week before showing the very limited instructions for making a lemon meringue pie. I honestly don’t think I have ever made a lemon meringue pie before, but I’ve made plenty of pastry, curd and meringue, so I was hoping it was going to be fairly straightforward. The recipe can be found here. And there are plenty of instructions if you need them. Luckily it was all very straightforward, I made the pastry, lined the tin and let it chill in the fridge. I bake the pastry case on Saturday and then made the lemon filling on Sunday. And then finished it off with the meringue later on.

It didn’t say which sized eggs to use, I had large eggs and it actually made far to much meringue! I used as much as I thought it needed and then piped the rest as meringues and baked them separately. We went over to our friends for a Sunday roast and I bought the lemon meringue pie along for pudding, it went down pretty well! You can’t beat a traditional pudding!
