
I was very tempted this week to have a go at an illusion biscuit bake, but realised it would take far too long, so settled for doing the technical again and you can’t beat a good custard cream! I baked with the girls again on Saturday but due to how long these took to chill and cut out I had to finish them off after bed time, but it meant we had a big box to take with us to the rugby festival on Sunday and share with the team. I managed to get hold of some cutters from a local shop which was lucky as they sell out online very quickly once the Bake Off is on and so many people want to give them a go that they end up out of stock very quickly. Unfortunately the spring inside the cutter kept popping out so I really struggled to use it properly and the dough was so soft which made it very hard to work with.

I had to keep putting it back in the freezer once I had rolled it out as it was too squishy to cut, so it took ages to cut them all out. But I eventually managed it and although the imprint wasn’t great, you could still tell what they were supposed to be. The custard cream filling was amazing! It was great to take them to the rugby festival and share them, they definitely got the thumbs up!
