
I’m still playing catch up on making the technical challenges but found some time yesterday to give this one a go. Thyme is my absolute favourite herb, but I don’t think I have ever used it in a sweet recipe before, so I was keen to try this out. Click here to keep reading.

The cake recipe was very simple, but I can see that without the quantities of thyme, it would definitely be hard to get the right balance. Luckily I had the recipe and it can be found here.

Making the crystallised lemon was a bit of a faff, but totally worth it, it tastes amazing, I couldn’t stop nibbling at the extras! The cake was delicious, everything you would expect from a lemon drizzle cake, a lovely crumb, sticky drizzle and yummy lemony icing.
